Yes it's green but it's delicious even your kids will like it.

Sopitas Verdes, or Green Soup like my momma used to make. The only way she would get me to eat my veggies. ;) So easy to make and very soothing on a chilly day.

The recipe is easy, Vegetable or chicken broth, add brocoli, spinach, bell peppers, onions, green beans, squash, a tomato (if you like), kale or leeks. You get the gist of it. And then after it's all cooks and softens, let it cool a little bit and run through the blender. (PLEASE, be very careful with hot item in a blender. Do not close the blender lid tightly or place a towel over the top, sometimes hot things in a blender will kick back the lid and hot bits. PLEASE be very careful, it's best to let it cool down).

After it's all well blended. You can run it through sieve if you used celery it will get the little strings out. But finely chopping the celery will help that.

You can then put your soup back in the pot to rewarm and then serve.

I like to top it with a dollop of sour cream or in this case some drops of Cacique Mexican style Cream

Pain free, and counting.

I cannot begin to tell you all how nice it has been these last few days. I have had 12 pain free nights, or wakes up rather.
I don't know why? But I'm not going to question it, I am just eternally grateful.
